Vinification and ageing: Early harvest. 100% destemming and crushing of the grapes before maceration for 20 days in stainless steel vats. The extractions are carried out using pumping over so as not to rush the marc and obtain silky tannins and an intense color. Fermentation temperature between 20 and 24°C. Aged in lined concrete vats. Search for a beautiful material, with a more atypical and cooler profile.
