Terroir: From plots planted on hillsides, located north of Vaison, at an altitude of 250 to 300 meters. Mainly sandstone and pebble soils.

Climate: The hills, well exposed, benefit from the generosity of the sun and the benefits of the Mistral.

Vinification and aging: For our reds, we are looking for gourmet and fresh wines, on a soft tannic base. We work in traditional vinification, with bi-daily tasting of the vats, which allows us to control the extraction of the structure. Maceration under marc for 2 to 4 weeks depending on the cuvées, in order to work on the fat, the smoothness and the melted tannins. Aging on fine lees in order to preserve the aromas and promote fat gain and coating of the tannins

Tasting:

  • Pretty purple color.
  • The nose opens with notes of ripe red fruits, combined with fine woody notes.
  • The palate, ample and long, offers these same fruity flavors and this roasted oak, with aromas of cocoa and bitter chocolate.

Food and wine pairings: Perfect with poultry served in cream, wild boar stew or a fine assortment of mature cheeses.
