Terroir: The vineyard is well exposed on slight slopes. Our white grape varieties benefit from ideal sunshine. The deep, sandy clay soils of the lower slopes favor a constant water supply which allows them to fully express their freshness and their aromas.
Climate: The hills, well exposed, benefit from the generosity of the sun and the benefits of the Mistral
Vinification and ageing: Pneumatic pressing with an optimized cycle to limit oxidation and color extraction. Clarification after 2 days of cold settling. Yeasting with strains selected for their ability to reveal the aromas of each grape variety. Alcoholic fermentation in lined concrete vats for 15 to 20 days between 14°C and 16°C. Brewing of the lees for 1 month in order to obtain a creamy and greedy mouth. Aged in stainless steel vats to preserve freshness until bottling between December and April of the following year.
Tasting:
- Appearance: bright, pale color
- The nose: a beautiful complexity, aromas of pear and white flowers
- The palate: round, with pretty fruity (pear, mango) and floral notes.
Food and wine pairings: Pleasant as an aperitif but also as an accompaniment to fish (a la plancha or in sauce), aioli. At the end of the meal, with fresh and refined goat cheese.
