Terroir: Deep clay-limestone soils. The vines are located in the northern part of the Ventoux appellation in the communes of Malaucène, Crestet and Entrechaux at the foot of the Géant de Provence, on its steepest and wildest side.

Climate: The hills, well exposed, benefit from the generosity of the sun and the benefits of the Mistral

Vinification and aging: For our reds, we are looking for gourmet and fresh wines, on a soft tannic base. We work in traditional vinification, with bi-daily tasting of the vats, which allows us to control the extraction of the structure. Maceration under marc for 2 to 4 weeks depending on the cuvées, in order to work on the fat, the smoothness and the melted tannins. Aging on fine lees in order to preserve the aromas and promote fat acquisition and coating of the tannins.

Tasting: A beautiful sustained color. An expressive nose combining black fruits and spices. Tension and fruit in the service of freshness.

Food and wine pairings: Serve between 14° and 17°. Ideal companion for meals with friends on summer cuisine, caillettes, charcuterie or grilled meats Keeping: Drink within 3 years
