ORGANIC WINE
Terroir: The vineyard is well exposed on slight slopes, with ideal sunshine. The deep, sandy clay soils of the lower slopes favor a constant water supply which allows the grape varieties to fully express their freshness and their aromas.
Climate: The hills, well exposed, benefit from the generosity of the sun and the benefits of the Mistral
Vinification and ageing: Pneumatic pressing with an optimized cycle to limit oxidation and color extraction. Alcoholic fermentation in lined concrete vats for 15 to 20 days between 14°C and 16°C. Aged in stainless steel vats to preserve freshness until early bottling.
Tasting:
Food and wine pairings: Prawns à la plancha or grilled vegetables, small stuffed vegetables, or even a sushi evening.
