ORGANIC WINE
Terroir: The vineyard is well exposed on slight slopes. Our white grape varieties benefit from ideal sunshine. The deep, sandy clay soils of the lower slopes favor a constant water supply which allows them to fully express their freshness and their aromas.
Climate: The hills, well exposed, benefit from the generosity of the sun and the benefits of the Mistral
Vinification and ageing: Pneumatic pressing with an optimized cycle to limit oxidation and color extraction. Alcoholic fermentation in concrete coated tank for 15 to 20 days between 14°C and 16°C. Stirring of lees for 1 month to obtain a smooth and gourmet mouth. Maturing in stainless steel tank to preserve freshness until early bottling.

Food and wine pairings: Perfect as an aperitif, also to be enjoyed on a seafood platter, grilled fish or fresh goat cheese.
