In Southern zone, Viognier is well adapted to the deep, but not too fertile grounds, to avoid the risks of drought. It is indeed a grape variety which hardly supports hydric stress. It is rather planted in well exposed and ventilated zones, but shielded from violent winds. Coolness and regular water supply allow a good maturation of the grapes.Its uneasy growing requires a permanent attention on behalf of the passionate wine growers who planted some plots of land.
